Healthy pumpkin spice donut holes

It’s been so nice to finally get back into the swing of baking all the time! Now that we have more of a routine with baby izzy, I have more freedom to spend time in the kitchen again. This month, I wanted to try and work with pumpkin puree – something I’ve never baked with before – and so far, it has given me some super yummy recipes! Last week, I made these skinny pumpkin muffins (if you haven’t tried them yourself, stop right now and go bake em…you will love them!) and this week I decided to try some healthy pumpkin spice donut holes. Skinny Pumpkin Oatmeal Muffins with Chocolate Chips

Even though it’s sunny and 85 most days here in San Diego during October, I’m completely mentally immersed in Fall ❤ I brought out my decorations the last weekend of September, got some yummy scented soaps and candles for the house, and have already gone to the pumpkin patch three times now. There’s just something magical about the changing of seasons, blustery days, and golden hues slowly blanketing the trees. Speaking of magical, I had this pumpkin muffin recipe that I’ve been dying to try (it’s my first time baking with pumpkin puree!!!) but wanted to alter it so it’s healthy and full of good, clean ingredients.

Husband Approved Honey Soy Pork Tenderloin

At 38 weeks pregnant and knowing izzy could be here any day now, I definitely know two things: first, I do notttt want to be slaving away in the kitchen trying to come up with various lunch and dinner recipes 5-7 days out of the week until she’s here, and second, I sure as heck don’t want to do that after she’s here either, because really who has the time and energy to take care of a newborn and be in the kitchen making yummy meals every day AND want to clean up the mess afterward?! Psh! So earlier this week I decided I would try my hand at making 2-3 crockpot meals a week for the next two weeks – as well as prepare some make ahead crockpot freezer meals that I could throw together in less than 5 minutes while holding a baby. Except for the “green smoothie.” I’ve never tried to put greens in a smoothie, though I’ve heard it’s a healthy thing to do. But I’d rather eat my leafy greens in a salad, thanks. John told me he tried a kale one once and afterwards decided he would rather have his greens in salads, too. Taste test = 2/10.
